ingredient in hummus, Babaganush, and halva. It is made out of sesame paste,
water, lemon juice, garlic cloves, and cumin.
Babaganush
Babaganush is a Lebanese appetizer of mashed cooked eggplant mixed with
tahini, olive oil, possibly lemon juice, and various seasonings. It is similar
to hummus but made with eggplant. It contains around 72 fewer calories per cup
than hummus.
Magadra
Magadra is specially prepared rice and lentils, it can be had as an
appetizer or a meal. The rice and lentils are steamed together with spices
before adding freshly fried crunchy onions. The main flavor comes from
caramelized onions, fried to the point of golden brown. This gives the rice a
beautiful depth, both in color and taste.
Falafel
Falafel balls are commonly served in a pita, which acts as a pocket. A
wrapped sandwich prepared with falafel balls laid over a bed of salad or
pickled vegetables and drizzled with hot sauce or a tihini sauce. Falafel balls
may also be eaten alone as a snack or served as part of an assortment of
appetizers known as a meze.
